When I was growing up we had a dog that used to yank things off the clothesline. As sheets blew in the wind she’d launch herself at them and tug until the clothes pins popped. We never figured out if she was playing or protecting since she never destroyed anything she pulled down. We just learned to keep her inside when bedding and other blowy stuff was put out to dry.

It always reminded us of a goat we once knew. Her name was Rosie and one day she got hold of dad’s shirt collar, pulled it right off, and ate it. All while dad was wearing the shirt.

Choose pasture-raised turkey, if you can find it. Or look for certified humane turkey or ground chicken.

Gluten Free Turkey Meatballs with Zucchini and Moroccan Spices

Ingredients
  • 1 Tbsp. olive oil
  • 1 small onion, minced
  • 1 clove garlic, minced
  • 1 lb ground turkey
  • 1/4 cup fresh herbs, minced
  • ¼ tsp. salt
  • Freshly ground pepper
  • 2 tsp. Moroccan spice blend*
  • 1 zucchini, grated (about 1 cup)**
  • ½ Tbsp. lemon juice
  • 1 egg (optional)
Instructions
  1. Preheat oven to 350 F
  2. Saute onion and garlic in oil until soft and fragrant.  In a large bowl combine turkey and grated zucchini.
  3. Stir in onion mixture and remaining ingredients.  Form into mini patties or oval balls.
  4. Bake on a parchment-lined cookie sheet for 15-20 minutes, until done.

 

*Moroccan Spice Blend
  • 2 tsp. paprika
  • ½ tsp. smoked paprika
  • 1 tsp. cumin
  • ½ tsp. coriander
  • Pinch cayenne

Combine and store in an airtight container.
