I’m not much for potatoes, unless they’re the tiny, soft-skinned spring potatoes. They’re so creamy and sweet. You don’t want to smother that taste and texture. My favourite way to serve them…boiled then tossed with a bit of butter, salt & pepper and sprinkled with fresh chives from the garden.
