This recipe is one of those happy accidents. I sometimes bake in the early morning to make sure my kids have snacks for their lunches. One sleepy morning I was making my regular tahini oatmeal cookies but decided to add cocoa powder, then accidentally doubled the rolled oats. The result was a wholesome chocolaty cookie. With so many oats these cookies are surprisingly filling.
- 1 ½ cups flour
- 1 cup old fashioned rolled oats
- ½ t baking soda
- ½ t salt
- 1/3 – ½ cup cocoa
- 2/3 cup brown sugar
- ¼ cup soft butter
- ¼ cup canola oil
- ¼ cup tahini
- 1 t vanilla
- 1 egg
- ½ cup chocolate chips
Mash the butter with the sugar until well combined. Stir in the oil and tahini. When well mixed beat in the egg and the vanilla.
In a separate bowl combine the flour, oats, baking soda and salt.
Combine dry with wet and stir in the chocolate chips.
Drop by spoonfuls on a parchment lined baking sheet.
Bake at 375 for 10-12 minutes (don’t let them bake too long).
