Braised Red Cabbage

Ingredients
  

  • 1 Tbsp olive oil
  • 1/2 onion thinly sliced
  • 1 apple peeled, cored & diced
  • 1 small head of red cabbage quartered, cored and thinly sliced
  • 3 Tbsp apple cider vinegar
  • 3 Tbsp red wine or broth
  • 1/2 Tbsp molasses
  • salt & pepper to taste

Method
 

  1. In a heavy bottomed pot over medium heat, saute the onion until soft.
  2. Add the apple, cabbage, vinegar, wine and molasses.
  3. Reduce heat to low, toss cabbage and cook (covered) until tender, stirring from time to time.
  4. Season with salt & pepper
